Shalom and thank you for your question regarding meat in the kitchen when you have a non-Jewish helper in the house. Meat or chicken that is still in the package should have a kashrut sign on it. Once it is unpacked for defrosting, marinating, or cooking, indeed as you point out it needs to be identified, and this is by arranging it in such a manner that you can tell if it has been tampered with. This could be by wrapping it in a certain way, or placing carrot sticks on it… Whichever way you will be able to tell…
